Healthy Summer Eating

Summer has always been associated with more exercise and healthier food choices. This is not always the case, especially for children. A recent study has found that children gain weight 3 times faster over the summer due to a steady diet of junk food (when out on trips or with friends) and staying in playing video games.

As well as children, we are all partial to summer BBQ’s, bulmers in the sun and other temptations!

We have pulled together some delicious recipes, on the go snacks and some tips to keep nuts in your diet throughout the summer.

 

SUMMER FRUIT & NUT SALAD

INGREDIENTS

  • Salad greens
  • Fresh raspberries
  • Crunchy cashews
  • Toasted hazelnuts
  • Goats cheese
  • Avocado
  • Peaches (dried)
  • Mint

 

CINNAMON CASHEW AND POPCORN

  • cups air-popped popcorn (unsalted)
  • ounces nutty delights cinnamon cashews coarsely chopped
  • cup sesame sticks or sesame oat bran sticks 
  • tablespoons butter or margarine
  • Cinnamon powder to your liking

 

SUMMERTIME TAGLIARINI

  • 75 g pine nuts 
  • 2 lemons, juice and zest of 
  • 1 bunch fresh flat-leaf parsley, leaves picked, half finely chopped, and half left whole 
  • 135 ml extra virgin olive oil 
  • 95 g parmesan cheese, freshly grated, plus extra for shaving 
  • 30 g pecorino cheese freshly grated 
  • Sea salt 
  • Freshly ground black pepper 
  • 320 g good-quality tagliarini or tagliatelle

 

Nuts are the ultimate health food, they are high in protein, healthy fats, low in carbohydrates and stimulate the body to burn excess fats.

You can incorporate nuts into your diet by:

·         Topping your cereal with nuts

·         Instead of eating ice cream, sprinkle some peanuts onto frozen yoghurt for a delicious treat

·         replace crutons with nuts in soups and salads

·         Add to smoothie

·         Add to bread

·         Use a nut butter instead of chocolate spread

 

·         Pack nuts in a your zero waste bags from nutty delights and take them with you on trips as a treat.
