Notes: You can add 35g of Chopped Dried Cherries to intensify the flavour

Equipment: Food Processor and Baking Tray lined with parchment 

Instructions:

A big hit with adults and kids, these Cherry Almond Butter Energy Bites are not only a healthy snack but they are totally delicious. Using a flavored Nut Butter such as the Cherry Almond Butter from Nutty Delights lifts these No Bake treats from regular to super!

  1. Blitz the oats in a food processor for a few seconds to break them down. Next add the Frozen Cherries, Ground Flaxseed, Pitted Dates, Cherry Almond Butter, and Desiccated Coconut (If using) and blitz everything together until the mixture starts to get clumpy.
  2. Add the Chopped Dried Cherries if using and pulse to combine together.
  3. At this stage, you should be able to take clumps of the mixture and squeeze it in your hands. If it holds its shape, then it’s ready. If not, pulse for just a few seconds more.
  4. Take approximately a tablespoon of the mixture and roll it into a ball. I find if you squeeze it first in your hand, it will hold it’s shape better. Place the ball on the lined baking tray. Continue until all the mixture is used up
  5. Place the tray into the fridge for an hour. Remove from the fridge and melt the Chocolate with the Coconut Oil in short bursts in the microwave.
  6. Drizzle the melted chocolate back and forth over the balls to decorate and put it back into the fridge for 10 minutes.

These Energy Bites will last in the fridge, in an airtight container for up to 2 weeks! Simply enjoy one straight from the fridge when you get a hunger pang, after a workout, to give you an energy boost or when you are on the run.
