We thought we’d give you 2 tasty recipes we love making during the summer months that are super easy to whip up, nutritious, and uber-tasty. We’ll also look at the benefits of the nuts in these sweet and savory dishes. 

Frosted Walnut Bark

First up is our Frosted Walnuts. These are something for those who have a sweet tooth. These Frosted Walnuts will take you no more than 10 minutes to get started. These Frosted Walnuts are perfect for topping your ice crams with or on their own. A really simple way to take a dessert to a dinner party level. 

 

What you’ll need: 

 

  • Granulated Sugar (250g)
  • Nutty Delights Walnuts (200g)

Method: 

 

Take the 250grams of granulated sugar and 50mls of water to a pan and set over medium heat or flame. Cook and stir the sugar until it starts taking on brownish colors. The sugar should be fully dissolved. 

 

Once the sugar is dissolved and the sugar takes on color. Add your walnuts to the pan. Turn off the heat. 

 

Stir and cover the walnuts in the sugar until it crystallizes and covers them completely. 

 

Take a parchment-lined tray and spray some cooking oil to avoid sticking. 

 

Leave to cool and break into bite-size pieces.

Pistachio-Crusted Salmon

Next up is our savory dish. We’ve made this one load of times. So good, so easy. A gourmet meal made in minutes. 

 

Pistachio-Crusted Salmon. As gourmet as it sounds. This dish will most certainly impress guests at a summer dinner party. This dish is drool-worthy good. The nutty pistachios mixed with honey, lemon, and garlic in the glaze combined with salmon work so well together, almost creating a flavor explosion in your mouth. Hungry now talking about it. Let’s get into it. 

 

You’ll need: 

  • Salmon Darnes
  • Clove of Garlic 
  • Tablespoon of olive oil 
  • A teaspoon of Dijon Mustard 
  • Tablespoon of Honey
  • 75grams of Pistachios, coarsely chopped

Method: 

First things first, preheat your oven. Rinse your salmon and place on a lined baking sheet, season with salt and pepper. 

 

In a small bowl, combine garlic, oil, lemon juice, mustard, and honey. Mix well. Once you have formed a paste, spread about ¾ evenly over your salmon. 

 

Take your coarsely chopped pistachios, and add them to the remaining mixture. Stir to combine. Spoon the mixture on top of the salmon and press lightly into the salmon using the back of the spoon. 

 

You can add some pistachios to the top here for some crunch. 

 

Bake for about 15-20 minutes until the salmon is flaky. 

 

Remove from the oven and enjoy! Serve with seasonal vegetables.
